1. Scientific context: lessons from the FILMBRETT research

The work carried out at the ISVV (University of Bordeaux, FILMBRETT project) has highlighted the polar and hydrophobic adhesion mechanisms by which Brettanomyces bruxellensis anchors itself to the internal surfaces of containers — whether made of wood, stainless steel, or resin.

This adhesion, governed by surface interactions between the functional groups of microbial cell walls and those of the substrate, leads to the formation of protective biofilms.

These biofilms:

  • resist conventional cleaning,
  • protect Brett cells from disinfecting agents,
  • and ensure chronic recontamination of the wine during successive fillings.

FILMBRETT demonstrates that these interactions depend directly on surface polarity, electrostatic charge (zeta potential), and the chemical composition of the materials.

2. Technological response: the mode of action of EBX BARREL-PROTECT®

EBX BARREL PROTECT® is an oenological surface protection innovation, designed from a targeted combination of natural reactive tannins whose physicochemical properties have been optimized to neutralize the microbial adhesion conditions described by FILMBRETT.

  • Reconfiguration of the internal wood surface:
The polyphenolic compounds in BARREL-PROTECT® react with the active sites of the wood to create a structured layer with a high density of hydroxyl and carbonyl groups, thus modifying its surface tension and polar component.
→ This modification reduces the energetic compatibility between the Brettanomyces cell wall and the wood surface, making anchoring unstable and reversible.

  • Complexation of adhesion proteins and polysaccharides:
The formulation interacts with the protein adhesins and exopolysaccharides secreted by the cells during the initial colonization phase.
→ This early complexation prevents the formation of the biofilm matrix and limits the long-term attachment of viable cells.

  • Prolonged bioprotective effect: The specific composition of BARREL PROTECT® generates a reducing microenvironment, unfavorable to the proliferation of spoilage yeasts and bacteria.
→ The wood surface remains microbiologically stable for 9 to 12 weeks, without the need for sulfur, ozone, or UV treatment.

  • Sensory stability and regulatory compliance:
EBX BARREL PROTECT® is a 100% natural product, free from preservatives, compliant with the International Oenological Codex, and certified for use in organic winemaking (ECOCERT – EC & NOP).

Its action is temporary: after rinsing, the protective layer is removed without leaving any residue or organoleptic impact on the wine.

3. Direct correlation with FILMBRETT observations

Mechanism identified in the FILMBRETT thesis Compensatory action of EBX BARREL-PROTECT®
Polar and hydrophobic interactions between Brett and wood surfaces Modification of the wood’s polarity and surface tension → inhibition of adhesion
Secretion of adhesion polymers and biofilm formation Complexation and neutralization of exopolysaccharides and surface proteins
Microbial persistence between vintages Chemically inert surface, preventing wall recolonization
Limited effectiveness of SO₂ or chemical cleaners Natural protection, sulfur-free, active for several weeks, compatible with organic production

4. Summary

EBX BARREL PROTECT® acts both upstream (blocking adhesion) and downstream (inhibiting biofilm formation), by exploiting mechanisms identified by scientific research on Brettanomyces.

Its formulation, based on highly reactive polyphenols, temporarily transforms the surface chemistry of the wood, preventing long-term microbial attachment while preserving the sensory integrity of the container.

This unique technology offers a natural, durable, and Codex-compliant protection solution, aligning with a responsible winemaking approach that is sulfur-free and water-efficient.
